this is what i made for an early sunday dinner. well, of course we had rice and lovely cauliflower, but this roast recipe is one i've saved for a while and i finally remembered where it was and had all of the ingredients on hand at the same time i had a roast. wow. it's a miracle. i did not follow the recipe exactly so here is my take:
one lovely little pork roast (mine was 2 pounds)
put about a TBSP of oil in the bottom of the pan
set the roast in
pour a little orange juice and soy sauce over roast
add a little water to the pan
generously sprinkle on:
ginger powder
garlic powder
curry powder
salt
pepper
bake at 350* for 45 minutes
meanwhile, mix together in a small cup:
3 TBSP. ketchup
3 TBSP honey
1 TBSP cider vinegar
1 tsp red wine vinegar
when the 45 minutes are up, spoon about half of this over the top of the roast.
return to oven. roast about 30 minutes longer. spoon the rest of the glaze over the roast. turn oven down to 300*. cook about 20 more minutes. that's it folks.
i didn't get to any more creating today. after our dinner, the day took on a new course of events. our sweet kitty, cricket, is in the emergency veterinary hospital. this is our first experience with something like this and i am a wreck. i hope we'll hear good news tomorrow but i don't count on anything too rosy. i hope you all are enjoying your evening. please hold good thoughts for cricket. thank you.
