this afternoon i remembered that we could avoid the insanity of a dreaded friday grocery store run because we had a few zucchini in the fridge. we love zucchini pancakes but with temperatures hovering around 107* i was not enthusiastic about frying them. so i made this sweet little casserole style instead and it was fabulous.
it was a breeze to make and walk away from, carefree! the best part of my brainstorm, however, was the idea to pair this up with one of our favorites, mr. rogers' - yes, the neighborhood icon - grandmother rogers' corn pudding. it's been a long time since we had one and the baking times matched up so well. here it is...
time for tea and blueberry pie so that's all for now, friends.
